Opened in November 2025, a specialty shop for an "evolved" soba that fuses French technique with Okinawa soba. Talked-about creations include a bowl pairing salmon-based dashi with truffle, salmon jushii (Okinawan seasoned rice), and Arita-ware tableware — altogether a "French Okinawa soba" concept. Comparing it with traditional Shuri Soba lets you experience both the roots and the cutting edge of soba culture in a single day. Staying open until 10pm is also rare for Shuri.
